Colby is a semi-hard orange cheese made from our Jersey A2 cow's milk. It is named after the city of Colby, Wisconsin, USA, where it was first developed in 1885 and quickly became popular.
Our cheese is aged 60 days. The aging process intensifies the flavor and changes the texture of cheese. As cheese ages, it loses moisture while enzymes and microbes continue developing within the cheese.
