Delicious Italian Sauce using Chicken Livers
This bold sauce is delicious for cold weather and any pasta "with a hole" like Penne or Cavatappi hold the sauce best. Serve with a Chianti or any red wine.

Ingredients

  • (Garlic) 2 cloves diced
  • (Celery) one stalk diced
  • (Parsley) 2 tablespoons
  • (Olive Oil) enough to coat the pot bottom
  • (Small Carrot) shredded
  • (Small Onion) finely diced
  • (Tomato Paste) half can
  • (Boullion Cube) 2 small cubes
  • (quarter pound liquified) Chicken Liver
  • (one pound) Beef Ground

Directions

Dice into small pieces garlic, celery, parsley, carrot and onion and using a medium sized pot, saute the five ingredients in olive oil until it's all soft. While sauteing, boil a couple cups of water that you'll add to the sauce later.

Add Farmstead Acres' ground beef and cook until pink is gone.

Add boullion and tomato paste, stir and lower heat so that sauce simmers for about 45 minutes. Add the hot water a quarter cup or so at a time to keep the sauce from getting dry.

Add Farmstead Acres' liver, salt to taste and stir and cook an additional 15 minutes.

Cook your pasta in salted water. When pasta is almost done, take about 1/4 to 1/2 cup pasta water and add it to sauce. Stir. Serve with your favorite pasta. Buon Appetito!
